La Mar Cebichería queues hit 60-90 minutes by 13:00 — arrive at 12:00 sharp for the second seating. The trade-off versus February is slightly cooler nights (19°C vs 20°C) and a gentler UV profile during 10:00-15:00 outdoor windows. Pair with Cusco shoulder (avoid wet-season peak) by extending into March for a full Peru loop.

February delivers Lima's hottest reliable weather — 28°C / 82°F daily highs, 23°C sea temperature (the warmest of the year), and zero rain days. The trade-off is a UV index of 12 (the year's extreme peak) and Argentine / Brazilian holiday traffic spilling into Lima's foodie scene. Pisco Sour Day on the first Saturday is genuinely worth planning around — Hotel Bolívar (the 1924 claimed birthplace) hosts cocktail demonstrations, Carnaval Bar runs a Pisco flight tasting, and bars across San Isidro pour double-format Catedral cocktails.
